I know that 90 percent of you don't like anything in the following recipe, but I made it the other night and it is delicious so you all should try. Mom and Dad, this is basically just for you... I don't think anybody else would try it :)

Vegetable Orzo

1-1/2 cups fresh mushrooms, halved

1 medium zucchini, chopped

1 medium sweet yellow pepper, chopped

1 medium sweet red pepper, chopped

1 small red onion, cut into wedges

1 cup cut fresh asparagus (1-in. pieces)

1 Tbsp. olive oil

1 tsp. each dried oregano, thyme and rosemary, crushed

1/2 tsp. salt

1-1/4 cups uncooked orzo pasta

1/4 cup crumbled feta cheese

1. Place vegetables in a 15-in. x 10-in. x 1-in. baking pan coated with cooking spray. Drizzle with oil and sprinkle with seasonings; toss to coat. Bake at 400 degrees for 20-25 minutes or until tender, stirring occasionally.

2. Meanwhile, cook orzo according to package directions. Drain; transfer to a serving bowl. Stir in roasted vegetables. Sprinkle with cheese.

For the rest of you, Kraft has new "Homestyle Macaroni," its in a bag, not a box, and is very good.. comes with bread crumbs for the top and everything!

Oops...

Today I spilt 44 oz of Sierra Mist in my car. I was picking it up by the top and the lid wasn't all the way on. The whole thing spilt all over the gear shifter thingy. It's really sticky.

Also, SAVE THE DATES are going in the mail TOMORROW! Get excited. They are super cute!

It's so exciting! Last night we watched Fame as I worked on my magazine.
And right now, at 10 in the morning, I'm working on my magazine as mom does school work (and Courtney is updating her google calendar with the softball schedule--she made the BAYLOR SOFTBALL TEAM!!).
We're just a really active bunch right now. But we'll probably spend some time this afternoon going to the zoo and shopping!! Good thing you decided to join the men's league, dad. Earn some extra cash just in time for me to get new things! :)

And the walls came crumbling down...

As you may remember from my earlier post, Robert and Kevin are tearing down part of our wall to make a pantry. Last night they were taking down the last stud when all of the sudden there was a big BOOM. The stud, which was still attached at the top, slipped out of Robs hands and hit the ground. It wouldn't budge, leaving us to believe that the wall is in fact load bearing. We had 3 different contractors tell us it wasn't load bearing so we were very surprised/scared. It was 11 pm when this all went down so we didn't know what to do. Luckily, we have awesome neighbors. We ran next door and they agreed to come over and take a look. They were able to get the stud to stand up straight again.

This morning Robert and Kevin put the new wall up and one of the contractors we met with last week is coming by this afternoon to check everything out. We are thinking that perhaps it is not a load bearing wall, it has just settled a bit, but I guess we will see this afternoon! I'll keep you updated!

Ps. Contractors, load bearing... I sound so old!

A real update on what I'm doing

I start teaching a new class tonight that will be every Thursday night for 6 weeks. I'm teaching "Management Decisions Making" and have 7 students. One of the students is the mother of one of Kyle's friends who actually played the role of Kyle's dad in High School Musical. I think that makes me realted to her in some strange way but it hurts my brain to figure that one out.

What makes dad happy

I played in the Terradyne Men's Golf League last night for the first time ever. It cost me $20 to play the game for that evening and I had no idea what the game was or how anyone would win. I played terrible the first two holes. I then played great for the next 7. I actually birdied hole number 1 with a putt that was about 10 yards off the green to a flag that was tucked behind the sandtrap (Kyle is excited right now). The weather was nice. The guys in my group were really friendly. We even had a beer together afterwards and the beer was very cold and great tasting (Stella on tap). I had convinced myself I was never going to play in the men's league again even with all the positives. Partly because I played terrible for two holes. But mostly because it cost $20 and I hate handing someone money and not knowing what I'm getting in return (if you doubt this call me when I'm doing my tax return). And then the pro walked up to me in the bar and told me I had won one of the bets and he handed me $95. I don't know for sure how I won or why I won. I do know I will be playing again next Wednesday.

I love men's league.
